Fluffy delicious clean pancakes!! I am so excited about these. They were delicious and I’m very excited to share the recipe. Always remember you can always make substitutes for what you have on hand (I include some ideas with the recipe),just keep it clean;) Let me know if you do change something and how it turned out. I love ideas!
1 cup cooked quinoa
3/4 cup soy flour (or almond/whole wheat etc)
2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
2 whole eggs (or 3 egg whites, or a banana if you’re vegan)
1 tsp oil (I used olive oil, canola would work too)
1 tsp vanilla extract
1/3 cup soy milk (or almond/coconut etc)
3TBSP Honey (or agave/maple syrup)
1 tsp Stevia (optional)
1 handful berries (optional-I used blackberries)
Basically I put all the ingredients in mu kitchen aid blended for a few minutes, then cooked over medium-low heat on the stove. I served mine with honey as syrup.
These pancakes are packed with protein from the quinoa and eggs, and they are fluffy and delicious!! :)
Next time I’m going to try to cut down the calories a but by using a banana instead of eggs, and organic applesauce instead of oil, and leaving out the Stevia.
