Clean Pancakes!!!

Okay, so these pancakes are FULLY clean, fluffly, and yummy!! This was the whole serving…..and I used

   - 1/4 cup quick oats
   - 1 scoop EAS Vanilla Soy Protein Powder
   - 1 egg (this is including the egg shown…will explain)
   - 1 tsp organic cane sugar (sub. honey or agave if desired)
   - 1/4 tsp baking powder
   - 1/4 tsp safflower oil (or EVOO, or Canola in a pinch)
   - plain unsweetened soy milk (~1/4cup. I didn’t measure, just kept adding until the consistency was what I wanted)
   - Optional :Honey (for topping)
   - Optional: Cinnamon (I forgot to add but I think it’d taste delicious!)
   - Optional: Pure Vanilla Extract (if you want a stronger vanilla flavor)

Step 1: Hear me out before you ignore this recipe….Grind the oats in a food processor. Okay, I’m not going to lie…ANY other time a recipe said to do this, I’d ignore it and skip to an easier one. Well I decided today that I am NOT using flour. So I broke out the food processor. And this literally took 20seconds. SO easy. Don’t skip out of laziness. And I made a lot extra and stored that, so next time, I CAN just go to it like flour! =]

Step 2: add all other dry ingredients together

Step 3: add as much of the egg white as you can into the mixture without breaking the yolk (I do this because the recipe doesn’t need a full egg, and I like to eat eggs with my pancakes, so what a perfect way to enjoy an egg over easy!) 

Step 4: Add in oil

Step 5: Add in soy milk until the desired batter consistency is achieved

Step 6: Cook over medium-low heat for a couple minutes both sides (until they’re lightly browned). Cook the leftover egg.

Step 7: Top with honey and enjoy! =]

I started today off with almost 30 grams of protein! How awesome is that?!
